Potato leaves are very sensitive and will wilt at the first frost. On the other hand it is believed that the spuds mature in the ground for up to ten days after the leaves fall, so there is no reason to worry. Some people dry their potatoes outside in a cool shade and store them unwashed. Others wash, dry and store them in boxes at a temperature of about 12-14°C for about 12 days so that their skin toughens before putting them into cold storage. From there they can go straight into the pot.
